Python for Embedded Systems?

Hello,I am an undergrad thinking of an embedded systems project similar to Nest's Hello doorbell. How is the idea of developing the program for the hardware in Python, as opposed to C programming. Given the processor is moderately powerful to perform image processing on live HD video stream, shouldn't the device also be able to host a Linux distribution and Python Virtual Machine to interpret Python code? Developing with Python should be much faster than C.
